Freeze-drying is a process as a result of which water is removed from the fruit in a vacuum, and only the essence remains, i.e. vitamins, trace elements and taste! What is the difference between lyophilization and drying? Drying leaves more water in the fruit, which makes them less durable and not resistant to long-term storage. This is freeze drying of frozen substances - the frozen product is dried in such a way that the liquid state is omitted. So the fruit by depriving it of water immediately becomes dry and crunchy!

Lyophilization is simply a process of preserving food that allows you to retain maximum nutrients, flavor and aroma while eliminating unnecessary weight and stopping the growth of microorganisms. How did you come to that? The first attempts at such drying were made at the end of the 19th century, but only in the 1930s did the world pay attention to this process. The Second World War in particular contributed to the development of freeze-drying (a blessing in disguise). In this unusual way, blood plasma and penicillin could be transported to help the wounded. Later, freeze-drying was used to create food rations for soldiers and astronauts. Over time, mountain climbers and sailors began to use these light and compact meals, and now we can enjoy them too.

Properties of freeze-dried berries

Berries are a real vitamin bomb - they contain, among others, vitamins B1, B2, A, C and PP. Blueberry is also rich in fiber, folic acid and fruit acids such as citric and malic. You can also find a lot of minerals in it, including, for example, phosphorus, zinc, calcium, iron and potassium.

Enjoy them as a healthy crunchy snack, as part of a hearty breakfast or use them to prepare your favorite recipes!

Freeze-dried fruit is crunchy and more distinct in taste, which is why it allows you to enjoy the flavors of summer even out of season. Freeze-dried "frost-dried" fruits are incredibly light, which makes the amount of 100g a really big package. They are an excellent alternative to not very healthy sweets or other highly processed snacks.

Freeze-dried blueberries, due to this process, retain most of their nutrients, such as vitamins, minerals and antioxidants. In addition, freeze-drying ensures a longer shelf life, so the berries can be stored for a long time without fear of spoilage. Freeze-dried blueberries are also light and easy to transport, making them ideal as a healthy snack to take on the road or to work. As for the taste, freeze-dried blueberries usually retain their natural flavor, but their texture is more crumbly and crunchy than fresh blueberries.
