Cream of tartar - what is it?

  • Other names: potassium tartrate, vinegar, vinegar, acid salt, tartarium, potassium hydrogen tartrate
  • a natural ruminant, of plant origin
  • is produced by the process of fermentation in wine production
  • in combination with purified soda can be used as a replacement for baking powder
  • irreplaceable for stiffening of protein foam, creams, baking without and souffles
  • inhibits crystallization of sugar

How tu use Cream of tartar?

  1. Cream of tartar can be used primarily to increase the volume and to preserve the consistency of the whipped protein
  2. Cream of tartar can be used to prepare homemade baking powder - mix 2 tsp tartrate with 1 teaspoon of baking soda, mix tartrate with acidity regulator. You will get 3 teaspoons of powder, which is enough to loosen the dough prepared from 3 glasses of flour. This blend works great in British scones and muffins, which contain milk activating our powder. Muffins prepared with this homemade baking powder are more plump than regular ones.
  3. Potassium tartrate is also added to the icing sugar because it prevents crystallization of the sugar and makes it easier to obtain a smooth mass without lumps, for the same reason it is worth adding it to the mass for homemade lollipops
