Eton Mess? Pavlova cake a la? With Cream of Tartar you will easily prepare beautiful, stiff and fluffy meringues. Cream of tartar is a very useful, almost unknown ingredient in the Polish kitchen, which fixes and tones the volume of egg whites. Cream of Tartar is functionally the acidity regulator used in some baking powders. In addition to sweeteners, it can also be used to obtain a creamy consistency in sweet desserts, for example, to make a smooth icing, because it prevents crystallization of sugar, is often used as a natural conditioner to give volume and fluffiness to pastries.

In contrast to the chemically obtained baking powder, Cream of Tartar is a natural product obtained as a by-product of wine grape fermentation. Because of its natural origin Cream of tartar is recommended as a component of cakes and cookies for children.

Cream of tartar - what is and how it works?

How to use cream of tartar?

  1. Cream of Tartar can be used primarily to increase the volume and fixation of the consistency of whipped protein foam
  2. Cream of tartar can be used to prepare homemade baking powder - mix 2 tsp tartrate with 1 teaspoon of baking soda, mix tartrate with acidity regulator. You will get 3 teaspoons of powder in this way, which is enough to loosen the dough prepared from 3 glasses of flour. This blend works great in British scones and muffins, which contain milk activating our powder. Muffins prepared with this homemade baking powder are more plump than regular ones.
  3. Potassium tartrate is also added to the icing sugar because it prevents crystallization of the sugar and makes it easier to obtain a smooth, lump-free mass, for the same reason it is worth adding it to the mass for homemade lollipops.

Cream of tartar meringue:


Components:

- 4 medium egg white eggs
- 1/4 teaspoon Cream of Tartar
225g of powdered sugar

  • basic principle: For each egg protein use 55g of icing sugar, the eggs must be at room temperature, if you keep the eggs in the fridge, remove them for a minimum of 2 hours before whipping
  • preheat the oven to 140 ° C
  • spread the baking paper on the baking sheet.
  • drive protein (no yolk contaminants) to large, thoroughly cleaned (for sure you can wipe it with a cotton swab soaked in lemon juice, remove any leftover fat) and a dry cream-tartar bowl. Choose the largest bowl you have
  • start pounding at low speed, increase as speed increases. When the foam is very rigid, you can add sugar. Do not overblown, pierced foam to sweat and may fall
  • add 3 tablespoons of sugar at a time and mix quickly after each addition. Stop when the mass is thick, fluffy, and creates 'pins' when pulling out the stirrers
  • spread the pulp on about 2 shabby spoons of paper, leaving enough room for them to expand and unfold.
  • bake on a low shelf for 45-60 minutes until they harden outward, then switch off the oven and leave to cool with the door open for 30 minutes to 'come' inside.

Trivia - acidic potassium tartar and nicotine hunger

Using a mixture of orange juice (not substituting with other juices) and acidic potassium tartrate is one of the recommended ways to detoxify the body from nicotine. Mix 1 tablespoon of potassium tartar with a glass of orange juice to drink a drink every evening before bedtime - synergistic effects of orange juice and potassium tartrate have the capacity to bind nicotine and accelerate its excretion, which detoxifies the body and significantly reduces nicotine hunger.
