Preparation:
Prepare additionally: 300g of egg whites (proteins from 7 large or 8 medium eggs), 2 tablespoons of vinegar, preferably apple vinegar, 225 ml of water
Preheat oven to 350° F (177°C)
- In a mixing bowl pour egg whites (carton is fine), water and vinegar. Add the dry mix to the liquid, beating by hand or electric mixer on low then medium speed for 1 minute until thick and fully Incorporated. It will have a porridge-like consistency at first. Let rest 5 minutes to thicken.
- Line baking sheet with parchment paper. If using springy icecream scoop (1 /3 c) It will make 10-11 dinner rolls. For Hamburger size buns mark dough Into 8 sections Drop Into round shapes about 1.5" high (baguettes no more than 2" In diam for doneness). Smooth tops of buns welting fingers as necessary
- Bake in center of oven for approx 55 min for the 8 bun size., 60-65 mm. for baguettes, 40 for small rolls. (For all sizes - You may be tempted to take them out early, but they do need the full time to dry out inside) If they are getting too brown, cover with foil.
- Allow to cool and set 10 minutes before slicing. Toaster oven or broiling produces best results for toasting. Store at room temp if eating same day. Will keep 1 week in fridge or up to 4 weeks in zip bags in, the freezer.
