Cortezas de cerdo or Spanish roasted pork skins with barbecue spices is an almost unknown Polish delicacy popular in many countries, in Anglo-Saxon countries known as pork rinds and in the countries of South and Central America it is chicharrón.
Fried pork skins are an interesting alternative for crisps for people on low carb or high fat and protein-fat diets (such as keto diet) - pork skin contains extremely low carbohydrates, these specifically round zero carbohydrates, but in two thirds they consist of protein.
