Thanks to this, almond butter retains more valuable nutrients and has a unique, delicious taste.
Barney Butter's split seed is a rich source of vitamin E, B1 and B3, as well as micronutrients: calcium, phosphorus, magnesium, iron, zinc and niacin. They provide valuable Omega-3 acids, are a rich source of antioxidants and thanks to exceptionally high fiber content, they prevent blood sugar fluctuations.
What is the difference between raw almond butter and almond butter from roasted almonds?
Almonds are a source of valuable ingredients - they are rich in monounsaturated fats that support heart health and maintain a healthy cholesterol. Almond roasting alters the structure of polyunsaturated fatty acids contained in them, increasing their susceptibility to oxidative processes - unsaturated fatty acids are chemically unstable at high temperatures.
Roasting also raises the likelihood of a rancid process - because the entire surface of almonds is exposed to oxygen. The butter that starts the rancidity process becomes hazardous to health, creates the risk of inflammation in the body and even has a carcinogenic effect - that is why the butter from Roasted nuts must be stored in a refrigerator and almond butter from raw almonds is not at all prone to rancidity and do not need to be refrigerated even after opening the jar.
Almonds are potentially hazardous to the body - research conducted in Switzerland and published in 2005 in the Journal of Agricultural and Food Chemistry showed that almonds containing the highest percentage of free aspartic acid (one amino acid) after roasting showed highest content of harmful acrylamide.
