The fresh coconut pulp of ripe coconuts is gently dried, degreased in a 100% mechanical pressing process without the use of any chemicals, and finally ground into silk-smooth dust. The fat content of this flour is reduced to a maximum of 7% -9% and the fiber content is kept at an extremely high level of over 40%. Coconut flour is characterized by a very high fluid absorption due to the high fiber content - it absorbs up to 60% more fluid than it weighs, which should be remembered when replacing coconut flour with traditional wheat flour in recipes - the amount of flour can be reduced by 20% -25%. Coconut flour is naturally sweet, so you can limit the use of sugar or sweeteners. Coconut flour is a natural source of potassium - 100g of flour provides 1750mg of potassium, other valuable minerals in total constitute as much as 5% of coconut flour.
