Doves Farm Gluten & Wheat Free White Self-Raising Flour Blend 1kg - let"s start with the properties of our blend. First and foremost, it"s completely gluten-free, wheat-free. Secondly, it contains ingredients that make it rise - it does not require adding baking powder. Third, it consists of natural ingredients.

Rice, potato, tapioca, corn and buckwheat flour. Why do so many different kinds of flour make up the perfect composition?

To put it simply, wheat flour relies heavily on the work of its proteins, i.e. gluten. By kneading and adding liquid, it creates a gluten mesh.

We have no gluten in our blend. So we need to replace it with something so that the structure of the raw dough is preserved and has similar properties.

  1. Rice flour is made from ground rice - refined white or uncleaned brown. It is one of the most popular gluten-free flours. Alone in products, unfortunately, it gives us the impression of flowiness and brittleness.
  2. Potato flour is obtained from potato tubers. We use it on a daily basis, among others. for thickening, in our mixture it will guarantee stickiness.
  3. Tapioca is a flour obtained from cassava, a plant from South America. We often find it in the form of small or larger balls. It absorbs a large amount of water, has gelling and thickening properties.
  4. Corn flour is obtained from the grinding of corn grains. It has a characteristic yellow color and a slightly sweet aftertaste. It contains a lot of fiber. Popular in the cuisine of the South American region.
  5. Buckwheat flour is made from grinding unroasted buckwheat. It contains a lot of elements necessary for us. Including zinc, copper, manganese, selenium, potassium, sodium, calcium and magnesium. The additional one contains vitamins from group B and E.

As you can see, Doves Farm Gluten & Wheat Free White Self-Raising Flour Blend has been composed so that we can always enjoy successful baking in our homes, without being forced to use wheat flour that is not used by us. In all of this, we made sure that the mix, apart from the properties of ordinary flour, also had nutritional and taste properties.
