Pancake vs. crêpe - how do they differ?
Pancake is believed to be American, with the first recipe recorded being from an 18th-century cookbook. They are usually served stacked on top of each other and form a spectacular tower drenched in sauce, maple syrup or other toppings. Meanwhile, their French counterpart crêpe is paper-thin 'biscuits' that cover the entire surface of the pan. They are usually served rolled or rolled with a variety of sweet and savory fillings. The main difference in the ingredients is that the pancakes are made with a leavening agent such as baking powder, while French (European) pancakes are not. French pancakes are traditionally made of buckwheat flour, although more and more often it is replaced by wheat flour. Another indicator of the difference is size. The pancake is smaller, thicker and slant, while the crêpe is much larger and thinner.
Pancakes often contain extra ingredients like blueberries, chocolate droplets, and even bananas, crêpe pancakes don't have these added ingredients - instead, these sweet toppings are usually wrapped inside.
BBC Food says another difference between the two dishes is how rich and silky the crêpe pancakes are. In culinary theory, this is achieved through the so-called resting the pancake dough from an hour to even a whole day. During the waiting period between mixing the dough and frying the pancakes, the starch particles in the flour are able to absorb more liquid from the dough, this absorption causes the particles to swell, resulting in a denser dough. This additional waiting time also allows the gluten contained in the flour to expand and release more air, resulting in delicate, chewy pancakes.
