What is xylitol?

Xylitol is a natural sweetener extracted from the fibrous parts of plants. Almost identical in taste to table sugar, but with two significant differences - xylitol is low calorie and has a low glycemic index IG. Xylitol also has natural cooling and moisturizing properties. The xylitol molecule contains only 5 carbon atoms, not 6, as most naturally occurring sugars - it is this difference in molecular structure that determines the many advantages of xylitol compared to ordinary sugar.
Low glycemic index

Xylitol excellently replaces both sugar and most popular sweeteners without taking away any of their taste or consistency. Unlike most sweeteners, xylitol leaves no taste in the mouth and is metabolized without insulin, which means that its consumption produces a significantly lower glycemic effect. Normal sugar has a glycemic index of 85-100 and IG xylitol is only 7. This is great information for anyone who is trying to avoid sugar and chooses foods with a low glycemic index.
Cooking with xylitol

When cooking or baking, use xylitol to replace sugar in the same proportions. Xylitol is stable at high temperatures, combines with other ingredients and dissolves in liquids just like sugar. Xylitol does not crystallize or caramelize.
