Recipe: Paleo Banana Bread
Ingredients:
- 1 1/2 cups Birch Benders Paleo Pancake and Waffle Mix
- 1/4 cup Coconut Oil, melted
- 3 Very Ripe Bananas
Directions: Preheat oven to 350 degrees. Line a loaf pan with parchment paper. In mixer bowl, mash bananas on high speed. Blend in coconut oil on medium speed setting. Stir in Birch Benders Paleo Pancake and Waffle Mix on medium, until just combined. Pour batter into lined loaf pan. Bake for 45 minutes until lightly golden and a toothpick inserted in the loaf removes cleanly. Let rest a few minutes before removing to a wire rack to cool.

Instructions: Combine 3/4 cup of Birch Benders mix with 1/2 cup of water, add 1 tablespoon of oil or other fat (we recommend coconut oil). Mix thoroughly, and fry in batches in a well-heated waffle iron. Combine 3/4 cup of Birch Benders mix and 1/2 cup of water. Mix thoroughly. Wait a few minutes for the batter to thicken. Fry in batches in a well-heated, lightly greased pan until golden brown on each side.
