Dr. Oetker Glycerine is a vegan food-grade glycerin (E422) that has been used for years in confectionery as a natural moisturizer (humectant). Its job is to retain moisture in desserts and baked goods, keeping them softer, fresher and more pleasing in texture for longer.

What is glycerin?

It is a colorless, odorless and slightly sweet liquid that is completely safe for consumption and is approved as a food additive throughout the EU. In confectionery, it is mainly used to soften icing and confectionery masses, but it is also great for home fit cooking - as a support in the preparation of reduced-calorie desserts.

Kitchen applications:

  • Homemade ice cream and fit protein ice cream - prevents the formation of large ice crystals, making the mass creamier and easier to scoop.
  • Icingsand frostings - makes the icing not harden to stone, but maintains a pleasant softness and elasticity.
  • Cakes and cupcakes - prolongs the freshness and moistness of baked goods, which is especially important for fit-versions with whole wheat flour.
  • Confectionery pastes, fondant, marzipan - makes them more flexible and improves plasticity.
  • Gel desserts, protein jellies - promotes the preservation of soft and springy texture.

How to use.

  • Ice cream: about 1-2 teaspoons (5-10 ml) per 1 liter of ice cream mix.
  • Royal icing: ½ teaspoon (2-3 ml) per 500 g of powdered sugar.
  • Cakes and muffins: 1 teaspoon (5 ml) per serving of cake.
  • Confectionery mixes: a few drops - add gradually until the desired consistency is reached.

Thanks to its versatility, Dr. Oetker Glycerine is an indispensable addition both in traditional baked goods and in modern, low-sugar fit desserts.

Nutritional values of glycerine

Glycerine has a slightly sweet taste and an energy value similar to sugar - about 4 kcal per 1 g. Unlike sucrose, it is metabolized differently in the body and can cause a slower rise in blood glucose levels. For this reason, it is sometimes used in reduced-sugar recipes, such as in "fit" desserts and low-carbohydrate products.
