The source of fiber in Foodspring bars is polydextrose, a type of water-soluble fraction of dietary fiber that is not digested in the upper digestive tract. Natural thickening polydextrose has fewer calories than regular sugar (1 kcal / gram compared to 4 kcal / gram in normally digestible carbohydrates) and has a low glycemic index (GI = 4-7), which means that it has no significant effect on increasing the level of glucose and insulin in the blood, which is why it is used in products for diabetics.
The second sweet source of fiber in Foodspring bars that deserves attention is FOS - or oligofructose, otherwise known as fructooligosaccharides, a product of inulin hydrolysis, which is present in large amounts in tubers and roots of many plants. Oligofructose has health benefits and oligofructose syrup can be used as a sugar substitute thanks to its natural sweetening properties. Despite the similar name, FOS fructo-oligosaccharides have nothing to do with either fructose, let alone glucose-fructose syrup. Fructooligosaccharides are a completely natural ingredient obtained from vegetable and fruit extracts, they are found in large amounts in, among others, bananas, onions, asparagus or barley, and most often it is obtained from chicory. Fructooligosaccharides play the role of the so-called soluble fraction of dietary fiber, they are not digested in the upper part of the digestive tract and are resistant to hydrolysis by digestive enzymes - fructooligosaccharides are fermented only in the colon by anaerobic bacteria, where they act as a stimulus for the development of bifidobacteria in the large intestine - in a way they have properties similar to inulin (chicory root flour), but more soluble than it.
