Freeze-drying is a process as a result of which water is removed from the fruit in a vacuum, and only the essence remains, i.e. vitamins, trace elements and taste! What is the difference between lyophilization and drying? Drying leaves more water in the fruit, which makes them less durable and not resistant to long-term storage. This is freeze drying of frozen substances - the frozen product is dried in such a way that the liquid state is omitted. So the fruit by depriving it of water immediately becomes dry and crunchy!
Lyophilization is simply a process of preserving food that allows you to retain maximum nutrients, flavor and aroma while eliminating unnecessary weight and stopping the growth of microorganisms.
