The source of fiber in VitaDulce sauces is polydextrose, a type of water-soluble fiber dietary fiber that is not digested in the upper gastrointestinal tract. Density polydextrose products have fewer calories than regular sugar (1 kcal / gram compared to 4 kcal / gram in normally digested carbohydrates). Polydextrose has a low glycemic index (GI = 4-7) and has no significant effect on raising blood glucose and insulin levels, which is why it is used in diabetic products.
Chemically speaking, polydextrose is a polymer of D-glucose, sorbitol and citric acid; Polydextrose with no taste or smell is used in sweet, dessert dairy products, primarily dietary and low-calorie, replacing carbohydrates (primarily as an alternative to sugars and starches) and fats. Polydextrose is a vegan and gluten-free ingredient most often obtained from corn starch, unlike polyols such as maltitol or erytrole, it is caramelized as a result of so-called Maillard reactions
