Mezze Maniche is a classic northern Italian pasta shape that is suitable for any kind of sauce. Mezze maniche tubes are usually grooved (rigate) and about half the size of rigatoni. It can be used versatile: both for classic creamy Carbonara, light pesto based on olive oil and herbs, and for thick sauces with meat and vegetables. It is also used in nutritious pasta salads and casseroles. After cooking, it is dry and resilient, thanks to the expertly selected types of durum wheat.
Classic Italian cuisine reaches for mezze maniche [dim. Med-ze Maan-ikay] mainly in the summer, because the name of the pasta means the short sleeves (or half-sleeves) characteristic of summer dresses, and many Italians consider this pasta to have a summery feel and is more suitable for lighter pasta recipes.
