It is an integral part of Christmas in Poland, often associated with homely warmth and tradition. Although other countries also have pastries with poppy seeds, such as the Austrian "Mohnstrudel" or the Czech "makový závin," there are important differences between them.
Polish strucla with poppy seeds has a thick, sweet poppy-seed paste in which poppy seeds are the main ingredient, but enriched with nuts, honey and flavorings such as vanilla or almonds. This mass is rolled into a delicate, thin yeast dough, which gives the structure of the baked product its characteristic fluffiness and lightness. The key thing in Polish strucla is to maintain the right proportions between the filling and the dough, where the filling is the main attraction.
In comparison, Austrian Mohnstrudel has a similar poppy seed base, but is often creamier, with the poppy seeds blended into a smooth paste.
