Fit cold jelly cheesecake with Funky Flavors Sweet Pithaya and light yogurt glaze.

Exotic, light, refreshing - perfect for a dessert in the summer climate or as a striking no-bake fit cake.

Ingredients (20-22 cm mold):

Bottom:

• 100 g of whole-grain sugar-free cookies or fit oats,
• 30 g coconut oil or clarified butter (melted).

Cheesecake mass:

• 500 g of light cheesecake (ground) or natural skyr,
• 250 g Greek yogurt light,
• 2 tbsp. gelatin + 70 ml hot water,
• 2 Tbsp. erythritol or other powdered sweetener,
• 10-12 drops of Funky Flavors Sweet Pithaya,
• juice of ½ lime.

Jelly layer:

• 400 ml water,
• 1 sugar-free jelly (such as raspberry or strawberry),
• 3-4 drops of Funky Flavors Sweet Pithaya.

Fit yogurt topping:

• 150 g of thick natural yogurt (or Greek light),
• 1 tsp. vanilla or natural protein conditioner,
• 3-4 drops of Funky Flavors Sweet Pithaya.

Preparation:

1. Bottom - crush cookies finely, mix with melted coconut oil. Line the bottom of the mold and press down. Place in the refrigerator.

2. Cheesecake mass - dissolve gelatin in hot water and cool. Combine cottage cheese with yogurt, sweetener, lime and Sweet Pithaya drops. Add the gelatin, blending until smooth. Pour the mixture on the bottom, put in the refrigerator for min. 2 hours.

3. Jelly - prepare according to the instructions, reducing the amount of water to 400 ml. Add a few drops of Sweet Pithaya to enhance the exotic touch. Set aside to set slightly, then pour over cheesecake. Refrigerate another 2-3 hours.

4. Fit topping - mix yogurt with protein conditioner and drops of flavoring. Spread just before serving or decorate portions of cheesecake.
