It's a large, filling cookie based on gluten-free oatmeal and natural fiber from chicory root, which make it filling and take care of stable energy levels. Hidden inside is a 25% pistachio filling, prepared from pistachio paste and whole pistachios, broken by the addition of sugar-free white chocolate. The pistachio flavor is distinct and authentic, and the sweetness comes from maltitol - a natural alternative to sugar with a lower GI, making the cookie sweet but not overly so.
