What is neotame from the chemical side?

Neotame (E-961) is an artificial sweetener that is a derivative of aspartame, but with much greater sweetening power - 7,000 to 13,000 times sweeter than sugar and about 40 times sweeter than aspartame itself. Chemically, it is a methylated analog of aspartame, in which an additional N-3,3-dimethylbutyl group has been introduced to increase its stability and sweetness. Thanks to this modification, it does not hydrolyze to phenylalanine in the body, which means it is safe for people with phenylketonuria (PKU).

Neotame is a white crystalline powder with high water solubility, resistant to high temperatures and stable under different pH conditions, making it ideal for food processing.
