Neotame is a low-calorie amino acid sweetener. The amino acids in neotame are found naturally in most protein-containing foods, including meat, dairy products, and vegetables.

Neotame was examined and approved by JECFA (Joint FAO / WHO Expert Committee on Food Additives) in 2003 and by EFSA (European Food Safety Authority) in 2007.

Neotame is a modern derivative of aspartame, this new generation sweetener is about 6,000 times sweeter than sugar, is widely used as a sugar substitute in food and beverages, with the advantage of being heat stable, calorie-free, zero glycemic index and safe for people with PKU. The name of neotame comes from the molecular structure of the 6-carbon neohexyl group attached to the amine nitrogen of aspartame.

Neotame is quite poorly soluble in water (solubility in water, 12.6 g / L at 25 ℃, aspartame is 10 g / L) and very soluble in alcohol and its solutions.

The biggest advantage of neotame compared to aspartame is its stability at 100 ℃ - neotame can be used at high temperatures for cooking and baking, while aspartame does not. This advantage also allows it to be used in pasteurization and high temperature sterilization processes.

Neotame tastes like sugar, with no bitter or metallic sweetener aftertaste, making it the optimal sugar replacement for use in foods and beverages. Since neotame is 6,000 sweeter than sugar, only a very small amount is needed to sweeten low-calorie foods and drinks, and has better thermal stability than aspartame, so it can be used in cooking and baking products where aspartame cannot be used, neotame is used also to enhance sweetness in blends with other high intensity sweeteners.

  • approved for consumption by the FDA (US) and EFSA (European Union), the ADI is 0.3 mg / kg bw / d in the US, in the EU EFSA concluded in 2007 that there are no safety concerns when neotame is to be used as sweetener and flavor enhancer, and as an acceptable daily intake (ADI) of 0-2 mg / kg bw / day.
