Lyophilization is the process by which excess water is removed in the vacuum of the fruit, leaving only the essence of vitamins and micronutrients. What is the difference between freeze drying and drying? Drying leaves more water in the fruit, which makes it less durable and less resistant to long-lasting storage.
Bilberry has a wide range of culinary uses. Perfectly suited as an appetizer, but it also blends well with other products, such as yoghurt or homogenised cheese. You can put it on the top of the cake, pancakes, add to porridge, muffins, ice cream, fruit salads. Everything depends on our individual preferences.
