Halva is much more than ground sesame, and the process of preparing halva using the traditional method is surprisingly complicated. Sesame seeds are rinsed in a saline solution to remove any impurities, and then three times in a water bath - to clean them of salt residues. The sesame seeds cleaned in this way are baked in a special tubular psistiria mold, whose movable flaps move like sesame seeds so that it is well and evenly roasted, but not burnt. Tahina (sesame paste) is prepared from toasted sesame using millstones, which is then placed in a copper dish with a semicircular bottom called pasimi. At the same time, sugar in water is boiled separately to obtain a thick sugar-caramel syrup, which is mixed with tahina when it reaches a temperature of 115 ° C - such a mixture is made by hand like a dough, hot kneaded - this process requires a lot of experience and it is primarily the skill and patience of the sesame kneader that the quality of the halva depends. Kneading the halva takes about 30 minutes, after that time heat is packed in ready packages.
