Torras Chocolate Negro Fondant is a 52% vegan dark chocolate confectionery fondant intended for professional confectioners with the following specifications:

  • tempering temperature 30 ° C-32 ° C
  • fusion temperature 38-41 ° C
  • hardening 26-27 ° C
  • optimal applications: decorations, filling of praline molds, fillings, coatings

Tip: in order to melt the chocolate in the microwave oven, set the device to a maximum power of 500W and heat up in stages lasting up to 90 seconds, stirring the chocolate mass after each heating until it reaches a homogeneous consistency. Suggested number of heatings: 2-3 times. Remember that maltitol-based sugar-free chocolate has a lower burn point than sugar-coated chocolate or pure cocoa liquor!
