Tylża is a town in East Prussia (now Sovetsk in Russia). In the 16th century, there were a lot of Dutch settlers in this area who passionately created quite hard, ripened, rennet cheeses from cow's milk. Sources say that the recipe was written down for the first time only in the 19th century by a family from Switzerland, which contributed to the creation of the Swiss Tilsit cheese called Tilsiter. According to the standards that have been set for this cheese, it should be firm, white to light yellow in color, with small holes and a brown rind, and have an intense flavor.
