Freeze-drying is a process as a result of which water is removed from the fruit in a vacuum, and only the essence remains, i.e. vitamins, trace elements and taste! What is the difference between lyophilization and drying? Drying leaves more water in the fruit, which makes them less durable and not resistant to long-term storage. This is freeze drying of frozen substances - the frozen product is dried in such a way that the liquid state is omitted. So the fruit by depriving it of water immediately becomes dry and crunchy!

Lyophilization is simply a process of preserving food that allows you to retain maximum nutrients, flavor and aroma while eliminating unnecessary weight and stopping the growth of microorganisms. How did you come to that? The first attempts at such drying were made at the end of the 19th century, but only in the 1930s did the world pay attention to this process. The Second World War in particular contributed to the development of freeze-drying (a blessing in disguise). In this unusual way, blood plasma and penicillin could be transported to help the wounded. Later, freeze-drying was used to create food rations for soldiers and astronauts. Over time, mountain climbers and sailors began to use these light and compact meals, and now we can enjoy them too.

Properties of freeze-dried cherries

Perfect for everyone who wants to break the taste of yoghurt, oatmeal or muesli with a distinct fruit flavor!

Freeze-dried cherries have a very intense and sweet taste, similar to fresh cherries, but more concentrated. Their consistency is light and crunchy, because the freeze-drying process removes water from them, leaving the fruit dry and crumbly. They can be added to yoghurts, breakfast cereals, cakes and desserts, as well as eaten as a snack on their own. Freeze-dried fruit is also a good source of nutrients such as vitamins and antioxidants because the freeze-drying process minimizes the loss of nutritional value compared to other drying methods.

  • Freeze-dried cherries are a rich source of vitamin A, which has a positive effect on eyesight and complexion.
  • Cherries are rich in vitamin C, which affects the proper functioning of the immune system.
  • They are a great source of antioxidants, preventing the occurrence of free radicals in the body, which accelerate the aging process of the skin. They have a low glycemic index.
  • Cherries contain a large amount of pectin, which has a positive effect on blood cholesterol levels.
  • In addition, they have a low glycemic index.
