Meridian Yeast Extract is naturally gluten-free. It is produced by a natural enzymatic fermentation process, mainly from brewer's yeast grown in barley wort. During the yeast extract production process, the gluten content is reduced to a level that in most cases is not detectable with an ELISA test with a detection limit of 5 ppm. Very rarely gluten is detected at a very low level, but always much lower than <20ppm legally classified as gluten free according to EU 929/2014 regulation.
