Fully Functional, gluten free certified, keto friendly, incredible cookies are soft-baked, chewy, and loaded with beneficial ingredients, and they’re delicious as well. But what does the term “fully functional” mean regarding cookies? It actually boils down to the ingredients we use in our recipes. We use functional ingredients that are known for their unique health-promoting properties. Here is a list of some of the ingredients featured in our cookies:

Grass-Fed Butter

Cows naturally eat grass. Unfortunately, as grain, soy and corn is less expensive, most commercial dairy cows in the US are fed a diet that isn’t ideal for their health or for the quality of the milk they produce. Research demonstrates that butter produced from cows fed diets high in grass instead of grain has more nutrients. Grass-fed butter has a healthier omega-3 to omega-6 ratio, has significantly more conjugated linoleic acid, is richer in antioxidants, and has higher levels of butyrate, lecithin, iodine, beta carotene, selenium and numerous vitamins including D, K, A, and K2.

Monk Fruit

Luo han guo or monk fruit, named for the Buddhist monks who first cultivated it in Southern China and Northern Thailand around 800 years ago, has been used medicinally for centuries. In addition to its sweet taste, Monk Fruit is known to have anti-inflammatory and antioxidant properties. The FDA approved this no calorie, no sugar natural sweetener derived from the vine grown fruits in 2010, and it’s quickly becoming a mainstream alternative to sugar as well as other plant-based sweeteners (like stevia that many feel have an undesirable aftertaste.) Although in its natural form monk fruit contains fructose and glucose, its sweetness comes from unique antioxidants called mogrosides, rather than from its juice. During the process of removing the skin and seeds, collecting the juice and creating a powder, the mogrosides separate, leaving the monk fruit extract free of fructose or glucose, and thus void of all sugars and calories. As this sweetener can be up to 250 times sweeter than table sugar, like many other manufacturers, the monk fruit we use is combined with erythritol to lessen the intensity of sweetness.

Almond Flour

Almond flour is an ingredient that we love here at The Cookie Department, because it makes our job of making cookies with added benefits super easy! Simply ground up blanched almonds with the skin removed, almond flour is high in protein, low in carbs and rich in fiber, manganese, magnesium, monounsaturated fats, vitamin E, and antioxidants. Almond flour is a great option for those with gluten or grain sensitivities, as well as those simply looking for a healthier or low carb approach to baked goods.

Farm Fresh Eggs

Eggs, considered a ‘complete’ source of protein because they contain all nine essential amino acids, pack a nutrition packed punch! In our cookies we use the whole egg, so you get the nutritional benefits of vitamins B2, B6, B12, A, D, E and K, as well as minerals selenium, zinc, iron and copper and the heart health promoting nutrients of betaine and choline.

Cocoa Powder

Oats make our cookies super-satisfying because they are an excellent source of fiber and protein, but besides that, they also bring a lot of vitamins, minerals, and antioxidants to the table.
