The fresh coconut pulp of ripe coconuts is gently dried, defatted in a 100% mechanical extrusion process without the use of any chemicals, and finally ground to a smooth silky powder. The fat content in this flour is reduced to a minimum of only 8% and the fiber content is maintained at extremely high levels of over 40%.
Coconut flour is characterized by very high absorption of liquids precisely because of its high fiber content - it absorbs up to 60% more liquids than it weighs, which should be remembered by replacing the traditional wheat flour in the recipes with coconut flour - the amount of flour can be reduced by 20% -25%. Coconut flour is naturally sweet, so you can limit the use of sugar or sweeteners.
