Ingredients:

  • 100g Liv Happy Food Konjac & Avoine Lasagne Pasta
  • 1 medium zucchini, cut into thin slices
  • 1 eggplant, cut into thin slices
  • 1 red bell bell pepper, sliced into strips
  • 1 onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 400g tomato passata
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil for garnish

Preparation:

  1. Preheat the oven to 180°C.
  2. In a skillet, heat the olive oil and sauté the onion and garlic until soft.
  3. Add the tomato passata, oregano, basil, salt and pepper. Cook over low heat for about 10 minutes.
  4. Meanwhile, in a separate pan, fry the zucchini, eggplant and bell peppers.
  5. In a casserole dish, arrange konjac noodles, vegetables and tomato sauce in layers.
  6. Bake the lasagna for about 20-25 minutes.
  7. Serve garnished with fresh basil.

Ingredients:

  • 100g Liv Happy Food Konjac & Avoine Lasagne Pasta
  • 200g chicken fillet, thinly sliced
  • 1 onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 200ml milk
  • 1 tbsp butter
  • 1 tbsp rice flour (gluten-free)
  • 100g grated mozzarella cheese
  • 400g tomato passata
  • 2 tbsp olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Preparation:

  1. Preheat the oven to 180°C.
  2. In a skillet, heat the olive oil and fry the onion and garlic until soft.
  3. Add the chicken fillet and fry until browned.
  4. Add the tomato passata, oregano, salt and pepper. Cook over low heat for about 10 minutes.
  5. In a saucepan melt butter, add rice flour and stir for a minute. Gradually add milk, stirring all the time, until a smooth béchamel sauce is formed. Season with salt and pepper.
  6. In a casserole dish, layer konjac noodles, chicken with tomato sauce, béchamel and mozzarella cheese.
  7. Bake the lasagna for about 25-30 minutes, until the cheese is golden.
  8. Serve hot, sprinkled with fresh herbs.
