Low-carbohydrate, high-protein and high-fiber lupine flour is ideally suited as an alternative to plain flour and a component of bread, pastries, pasta or gluten-free pancakes. Unlike peanut flour, which has a slightly sweet taste, lupine flour is slightly salty, has a grain structure reminiscent of a fine grain of corn flour.
Lupine flour is a rich source of protein and fiber, which makes for a long satiety feeling and low glycemic index prevents wolf hunger and sweets.
When cooking with lupine, remember to add more liquid - eg a spoonful of natural yogurt, because the lemon fiber is absorbed in the liquid lime.
Lupine protein is similar to soy protein and wheat, but has many advantages compared to them:
- Lupine protein is naturally gluten free
- Lupine flour is a rich source of arginine - an amino acid involved in the production of nitric oxide inside the body and thus contributes to the expansion of the blood vessels.
