Sodium carboxymethyl cellulose for food usage (also known as carboxymethylcellulose, or CMC).
A fine white to off white powder with a mild to none flavor, forming a gel when mixed with water. It acts as a thickener, binder, stabilizer; it dissolves rapidly in cold or warm water and suitable for use in many food systems.
Recommended dosage 0.5% to 4% depending on application.
Cellulose gum comes from the cell walls of plants such as wood pulp and cottonseeds, is used to make foods thick and creamy, without all the fat.
